

Oatmeal cookies with coconut and chocolate

- 2 cups GreenWise old fashioned oats
- 1 1/2 cups GreenWise unsweetened coconut flakes
- 1/2 cup of melted GreenWise organic virgin coconut oil
- 2 tbsp of GreenWise stevia blend
- 1/2 cup of unsweetened cocoa nibs
- 1 egg
Directions:
- Preheat the oven to 325°F
- Mix coconut oil, stevia and egg until smooth
- Add the oats and stir until well combined. Add the coconut
- Shape the cookies and place them on a tray with waxed paper. By hand if necessary
- Bake for 12 minutes and then let it cool for at least 5-10 minutes, before storing in an airtight container. Ready!
